Ingredients

For the Cookie Mixture
  • 1/2 cup salted butter
  • 1 3/4 cups granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • 3 cups quick oats Don't use old fashioned oats

Method

Preparation
  1. Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
  2. In a medium saucepan, combine butter, sugar, cocoa, and milk.
  3. Set over medium heat, and cook, stirring frequently, until it reaches a full boil.
  4. Allow the mixture to boil for 60 seconds without stirring.
  5. Remove from heat and immediately add in vanilla, peanut butter, and quick oats.
  6. Stir the mixture until well combined.
  7. Using a medium cookie scoop or two spoons, drop the mixture onto the lined baking sheets or into cupcake liners.
  8. Allow to rest at room temperature until set, about 20-30 minutes (refrigerating can speed this up).
Serving Suggestions
  1. No Bake Cookies are best enjoyed at room temperature. Serve them as they are or with a cold glass of milk or a hot cup of coffee.
  2. They also make great toppings for ice cream or can be crumbled over yogurt.
Storage
  1. Store your No Bake Cookies in an airtight container at room temperature for up to one week.
  2. For longer storage, refrigerate them; this will help them stay firmer.

Notes

Ensure you use quick oats for the right texture. Be careful not to overcook the mixture; 60 seconds is just right. Stir quickly after adding the peanut butter and oats to avoid clumps.
