Preparation
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add vegetable oil, eggs, buttermilk, and vanilla extract. Mix until just combined.
- Slowly pour in the hot coffee or water, mixing until smooth. The batter will be thin.
Baking
- Divide the batter evenly between the pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the cakes cool completely before frosting.
Frosting
- In a large bowl, beat the softened butter until creamy.
- Gradually add powdered sugar and cocoa powder, mixing on low.
- Pour in heavy cream, vanilla extract, and salt, then beat until smooth and fluffy.
Assembly
- Place one cake layer on a plate. Spread a thick layer of chocolate fudge frosting on top. Add the second cake layer and frost the top and sides.
- Slice and serve this rich, fudgy chocolate cake with a glass of cold milk or a scoop of vanilla ice cream.
Notes
Use buttermilk for added moisture. Hot coffee enhances chocolate flavor. Don't overmix the batter to keep the cake tender. Let the cake rest before slicing for cleaner pieces.
