  • 12 pieces Jalapeños Choose medium to large for easier stuffing.
  • 8 oz Cream Cheese For a lighter version, use low-fat cream cheese.
  • 2 cups Leftover Brisket Shredded or finely chopped, smoked or cooked.
  • 12 slices Bacon Opt for thin slices that will crisply wrap around the jalapeños.
  • 1/2 cup BBQ Sauce For glazing before serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño lengthwise to create a pocket, taking care not to cut all the way through. Scoop out the seeds and membranes for milder heat.
  3. Spoon a generous amount of cream cheese into each jalapeño before adding brisket.
Assembly
  1. Wrap each stuffed jalapeño tightly with a slice of bacon. Use a toothpick to secure if necessary.
  2. Place the jalapeños on a baking sheet.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, or until the bacon is crispy and the jalapeños are tender.
  2. Brush the jalapeños with BBQ sauce and return them to the oven for an additional 5 minutes.

Feel free to experiment with vegetarian options or alternate fillings like different cheeses. For a healthier version, consider turkey bacon or lean proteins.
