Preparation
- Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
- Place the chicken breasts in a single layer at the bottom of the slow cooker. Season with garlic powder, onion powder, black pepper, and dried thyme.
- In a mixing bowl, combine the condensed cream of chicken soup, sour cream, and chicken broth. Stir until smooth and well combined.
- Sprinkle the dry stuffing mix evenly over the chicken. Pour the soup mixture over the stuffing, ensuring it covers everything. If using frozen vegetables, sprinkle them over the top.
Cooking
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F/75°C).
Serving
- Gently fluff the stuffing with a fork and serve warm. This dish pairs well with a side of mashed potatoes, green beans, or cranberry sauce for a complete meal.
Notes
Use chicken thighs for more flavor, add vegetables for extra nutrition, or make it cheesy with shredded cheddar or Parmesan. For a crispy topping, transfer the stuffing to a baking dish and broil for 3–5 minutes.
