Main Ingredients
  • 1 cup Canned pineapple chunks Can also use fresh or frozen pineapple.
  • 500 grams Boneless, skinless chicken breasts or thighs Choose based on preference for lean or richer flavor.
  • 3 tablespoons Soy sauce Adds depth of flavor.
  • 2 cloves Garlic, minced Enhances savory taste.
  • 1 teaspoon Ginger, minced Bridges flavors between sweet and savory.
  • 1 cup Bell peppers, sliced Add colors and textures.
For Marinating
  • 1 cup Pineapple juice Helps in tenderizing the chicken.

Method
 

Marination
  1. In a zip-top bag, combine pineapple juice, soy sauce, minced garlic, and ginger.
  2. Add the chicken and seal the bag, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes up to 24 hours.
Cooking
  1. Preheat the grill to medium-high heat. Grill the chicken for about 6-8 minutes on each side until cooked through.
  2. Alternatively, bake at 375°F for 25-30 minutes or stir-fry in a wok over high heat for 5-7 minutes until browned.
  3. Add bell peppers and pineapple chunks to the pan during the last few minutes of cooking.
Serving
  1. Serve hot, garnished with cilantro or parsley and lime slices, alongside rice or noodles.

Notes

Experiment with adding teriyaki glaze for sweetness, or sriracha for heat. Roasting pineapple beforehand can also enhance its flavor.
