  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

Frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the butter and sugar until fluffy.
  3. Add eggs, buttermilk, and vanilla extract, mixing until well combined.
  4. In another bowl, combine flour and baking powder; gradually add to the wet mixture until just combined.
Baking
  1. Divide the batter into two bowls; tint one blue and the other green.
  2. Pour the batters into the prepared pans and swirl them together for a marbled effect.
  3. Bake for 25-30 minutes, or until a toothpick comes out clean.
  4. Let the cakes cool completely before frosting with buttercream.
  5. Decorate with the edible hibiscus flower and other ocean-themed decorations as desired.

Notes

The cake is best served chilled or at room temperature. Slice into generous pieces and serve it with a scoop of vanilla ice cream for added sweetness. Store in an airtight container at room temperature for up to three days, and refrigerate if needed.
