  • 12 pieces Corn or flour tortillas Corn tortillas are traditional for an authentic taste.
Meat and Protein
  • 1 pound Ground beef, turkey, or chicken Vegetarian options can include beans or lentils.
Cheese
  • 2 cups Shredded cheese (cheddar or Monterey Jack) Adds creaminess and flavor.
Vegetables
  • 1 cup Chopped bell peppers Can also include onions and zucchini.
Sauce
  • 2 cups Enchilada sauce or salsa Used for moisture and flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Start with a base layer of sauce in the baking dish.
  3. Add a layer of tortillas, cutting them to fit the dish.
  4. Spread a layer of refried beans, followed by a layer of vegetables.
  5. Sprinkle a layer of shredded cheese.
  6. Repeat layering tortillas, sauce, beans, vegetables, and cheese until all ingredients are used.
  7. Finish with a generous layer of cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, until the top is golden brown.
  3. Let the dish sit for 10-15 minutes before serving.

Notes

Consider pairing with refried beans, guacamole, and a simple cucumber and tomato salad. Garnish with fresh cilantro and crumbled queso fresco for added flavor.
