Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts Alternatively, use chicken thighs for added moisture.
  • 2 tablespoons olive oil For cooking and marinating.
  • 1 tablespoon lemon juice For marinating the chicken.
  • 2 cloves minced garlic For marinating the chicken.
  • 1 teaspoon Italian seasoning For added flavor.
  • to taste salt and pepper For seasoning.
For the Pasta
  • 12 oz penne or fettuccine Cook until al dente.
For the Sauce
  • 2 tablespoons butter For sautéing.
  • 1 cup chicken broth Base for the sauce.
  • 1 cup heavy cream Creates a creamy texture.
  • 1/2 cup Parmesan cheese Add more for garnishing.
  • 1/2 teaspoon crushed red pepper flakes For a hint of heat.
  • to taste salt and pepper For seasoning.
  • 1/4 cup fresh basil or parsley For garnishing.

Method
 

Preparation
  1. Marinate the chicken: In a bowl or resealable bag, combine olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper. Add the chicken breasts, ensuring they're well coated. Let marinate for at least 30 minutes.
  2. Cook the pasta: In a large pot of salted boiling water, cook the penne or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
Cooking
  1. In a skillet, heat butter and olive oil over medium heat. Sear the marinated chicken for about 6-7 minutes on each side until golden brown and fully cooked. Remove and set aside.
  2. In the same skillet, add chopped garlic and sauté until fragrant. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, and red pepper flakes, continuing to stir until the sauce thickens.
  3. Slice the cooked chicken and add it to the sauce, allowing it to absorb flavors for 2-3 minutes.
  4. Combine the drained pasta with the sauce and chicken in the skillet, tossing gently to coat.
Serving
  1. Serve the Marry Me Chicken Pasta warm, garnished with additional Parmesan and fresh herbs. Enjoy with a side salad or garlic bread.

Notes

For added flavor, consider incorporating sun-dried tomatoes or mushrooms into the sauce. Pair with a crisp white wine for a complete meal.
