Ingredients
  

For the Marinade
  • 2 lemons 2 lemons, one juiced and one sliced One lemon is juiced for the marinade, the other is sliced for baking.
  • 4 sprigs 4 sprigs of fresh rosemary Enhances flavor during marination and baking.
  • 3 cloves 3 cloves of garlic, minced Adds depth to the marinade.
  • 1/4 cup 1/4 cup of olive oil Base for the marinade, adds richness.
  • to taste N/A Salt and pepper to taste Season to preference.
For the Chicken
  • 4 pieces 4 bone-in, skin-on chicken breasts or thighs Main protein for the dish.

Method
 

Marination
  1. In a bowl, combine lemon juice, olive oil, minced garlic, salt, and pepper.
  2. Place the chicken in the marinade, ensuring it's well-coated. Add rosemary sprigs and lemon slices.
  3. Marinate for at least 30 minutes, or for best results, overnight in the refrigerator.
Cooking
  1. Preheat your oven to 375°F (190°C).
  2. Arrange the marinated chicken in a baking dish.
  3. Pour the remaining marinade over the chicken and tuck in the lemon slices and rosemary.
  4. Bake for 35-40 minutes, or until the chicken is cooked through and the skin is golden and crispy.
  5. Let the chicken rest for a few minutes before serving to ensure the juices redistribute.

Notes

Longer marination intensifies flavors. For even cooking, bring chicken to room temperature before baking. Baste with pan juices halfway through baking for added moisture.
