  • 8 oz full-fat cream cheese Softened to room temperature
  • 14 oz sweetened condensed milk
  • 1/2 cup fresh lemon juice Freshly squeezed
  • 1 tbsp lemon zest Freshly grated
  • 1 tsp vanilla extract
For the Crust
  • 1 package graham cracker crust Homemade or store-bought
For Garnish
  • 1 cup whipped topping or heavy cream Optional
  • 1 tbsp lemon zest For topping

Method
 

Preparation
  1. If using a homemade graham cracker crust, mix crushed graham crackers, melted butter, and sugar. Press mixture into a pie pan and chill for at least 30 minutes.
  2. In a large bowl, beat the softened cream cheese until fluffy. Gradually add sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Mix until smooth.
  3. Pour the filling into the chilled crust and smooth the top.
  4. Refrigerate for at least 4 hours, or until fully set. For best results, chill overnight.

Notes

For better flavor, always use fresh lemons. Chill the crust before adding filling to prevent sogginess. Serve with whipped cream and a sprinkle of fresh lemon zest.
