  • 1 lb ground beef
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans, drained and rinsed (15 oz) Drain well to avoid excess moisture.
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 1 cup cheese (cheddar or Mexican blend)
  • 2 tablespoons taco seasoning Adjust to taste.
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and add chopped onion and bell peppers. Sauté until soft.
  3. Add the ground beef and cook until browned. Drain excess fat.
  4. Stir in the diced tomatoes, black beans, taco seasoning, salt, and pepper. Mix well.
  5. Transfer the mixture to a baking dish and top with cheese.
  6. Bake for about 20-25 minutes, until the cheese is melted and bubbly.
  7. Serve hot.

Notes

Keto Tex Mex Casserole pairs nicely with a side salad or avocado. You can also top it with sour cream or salsa for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to three days. For reheating, warm in the oven or microwave. Freezing leftovers is possible for up to three months.
