Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and add chopped onion and bell peppers. Sauté until soft.
- Add the ground beef and cook until browned. Drain excess fat.
- Stir in the diced tomatoes, black beans, taco seasoning, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish and top with cheese.
- Bake for about 20-25 minutes, until the cheese is melted and bubbly.
- Serve hot.
Notes
