  • 1 lb boneless chicken breasts or thighs cut into bite-sized pieces
  • 2 pieces bell peppers (red and yellow) sliced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Optional Toppings
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice for a bright, fresh finish

Preparation
  1. Start by preparing all your ingredients so everything is ready to cook.
  2. Chop the bell peppers and broccoli into bite-sized pieces.
  3. Slice the chicken breasts or thighs into strips or chunks.
Cooking
  1. Heat a large skillet or sauté pan over medium-high heat and add the olive oil.
  2. Season the chicken pieces with salt and pepper.
  3. Place the chicken in the pan and cook for 5–7 minutes, stirring occasionally, until it’s golden brown and cooked through.
  4. Once the chicken is cooked, toss in the bell peppers, broccoli, and minced garlic.
  5. Sprinkle in the Italian seasoning, and adjust salt and pepper to taste.
  6. Stir everything together to coat evenly.
  7. Continue cooking for another 5–7 minutes, stirring occasionally, until the vegetables are tender-crisp but still vibrant.
  8. For extra flavor, top the dish with freshly grated Parmesan cheese and a squeeze of lemon juice before serving.

Notes

Use chicken thighs for extra juiciness. Swap in your favorite vegetables like zucchini, mushrooms, or asparagus for variety.
