For the Cake
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cups unsalted butter, softened
  • 0.75 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cups sour cream (or plain Greek yogurt)
  • 0.5 cups cream cheese, softened
  • 0.5 cups crumbled feta cheese
  • 1 cup fresh or frozen cranberries, halved if large
Optional Glaze
  • 0.5 cups powdered sugar
  • 1-2 tbsp milk or lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well. Stir in vanilla.
  5. Mix in the cream cheese and sour cream until smooth.
  6. Add the dry ingredients to the wet ingredients and mix just until combined.
  7. Gently fold in the crumbled feta and cranberries.
Baking
  1. Pour batter into prepared pan and smooth the top.
  2. Bake for 40–50 minutes, or until a toothpick comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
Adding the Glaze (Optional)
  1. Whisk powdered sugar with milk or lemon juice until smooth.
  2. Drizzle over cooled cake and garnish with extra cranberries or feta crumbles if desired.

Notes

Make sure your butter, eggs, and dairy are at room temperature for the smoothest batter. Stir gently to avoid overmixing. If the top starts browning too quickly, tent with foil halfway through. Add orange zest for a citrusy pop or a pinch of cinnamon for warmth.
