  • 1/2 teaspoon salt

Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
Mix-Ins
  • 2 cups old-fashioned oats
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the oats, chocolate chips, coconut, and chopped pecans.
  7. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until golden brown around the edges.
  2. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use high-quality ingredients for the best flavor. Do not overmix the dough. Chill the dough for 30 minutes before baking for thicker cookies. Store cookies in an airtight container for up to a week.
