Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. Grease and line an 8-inch round pan with parchment paper.
Create the Batter
  1. Whisk the eggs and vanilla extract until frothy.
  2. Slowly blend in the sweetened condensed milk.
  3. Sift together the flour and baking powder.
  4. Fold the dry ingredients into the wet mixture using the 'J-fold' technique.
Bake
  1. Pour the batter into the prepared pan and tap to remove air bubbles.
  2. Bake for 35-40 minutes until golden brown.
  3. The cake is done when it pulls away from the edges of the pan.
Finish
  1. Cool in the pan for 15 minutes before transferring to a wire rack.
  2. Brush the warm cake with simple syrup for extra moisture.
