Ingredients
  

Main Ingredients
  • 2 pieces chicken breasts Fresh
  • 2 cups fresh spinach For best flavor
  • 1 cup mushrooms, sliced Any variety
  • 1 cup mozzarella cheese, shredded Can substitute with other cheeses
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes.
  3. Add the sliced mushrooms and cook until soft. Stir in the spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
  4. Place the chicken breasts in a baking dish and season with salt and pepper.
  5. Top each chicken breast with the spinach and mushroom mixture.
  6. Sprinkle the mozzarella cheese on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
Serving
  1. Serve hot straight out of the oven.

Notes

Store leftovers in an airtight container. It will stay fresh for up to 3 days in the fridge or can be frozen for up to a month.
