Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes.
- Add the sliced mushrooms and cook until soft. Stir in the spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
- Place the chicken breasts in a baking dish and season with salt and pepper.
- Top each chicken breast with the spinach and mushroom mixture.
- Sprinkle the mozzarella cheese on top.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
Serving
- Serve hot straight out of the oven.
Notes
Store leftovers in an airtight container. It will stay fresh for up to 3 days in the fridge or can be frozen for up to a month.
