Preparation
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and poke holes in them with a fork. Rub with olive oil, then sprinkle with salt.
- Bake potatoes directly on the oven rack for 45-60 minutes or until tender.
Filling the Potatoes
- Once baked, let the potatoes cool slightly, then cut them in half lengthwise and scoop out a portion of the insides, leaving a thin layer of potato.
- In a bowl, mix the scooped potato with sour cream, half the shredded cheese, crumbled bacon, green onions, salt, and pepper.
- Stuff the mixture back into the potato skins and top with the remaining cheese.
Baking
- Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
Best served out of the oven. These potatoes pair nicely with a side salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in an oven at 350°F (175°C) to avoid softening the skins.
