  • 8 small waffle cones or waffle cone bowls
  • 1.5 quarts ice cream, slightly softened
  • 3 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 1 pinch salt Enhances flavor
  • Optional: mini chocolate chips or chopped toasted nuts

Preparation
  1. Crush the waffle cones into chunky pieces using a rolling pin in a bag.
  2. Mix the crushed cones with brown sugar, melted butter, cinnamon, and a pinch of salt.
  3. Spread the mixture on a baking sheet and toast at 350°F for about 6 to 8 minutes, stirring once. Let cool.
  4. Scoop softened ice cream into thick rounds on parchment paper and press the toasted waffle cone crumble onto the sides.
  5. Freeze the rounds for 30 to 45 minutes until firm.
  6. Sandwich each ice cream round between two waffle cone bowls or cookies.

Notes

Don’t skip the salt as it enhances sweetness. Assemble and freeze the sandwiches, wrapping each in parchment for easy storage. Coffee ice cream pairs well with the cinnamon crumble for a grown-up flavor.
