Preparation
- Preheat your oven to 350º F. Line two baking sheets with parchment paper and set aside.
- Add the oats to a clean and dry food processor. Process on high speed for about 2 minutes until they look like coarse flour.
- Add the pumpkin puree and eggs to the processor. Pulse the mixture until it forms a stiff dough.
- Flour a clean work surface and roll out the dough until it is about 1/4-inch thick. Use a cookie cutter to shape the treats, placing them on the baking sheet.
- For round treats, scoop dough balls onto the parchment with a small cookie scoop, and press each ball down with a fork to make cross-hatch marks.
- Bake for 20-30 minutes or until the texture has stiffened. Allow them to cool completely before storing.
Serving and Storage
- Serve these pumpkin oat treats as a snack or reward during training.
- Store in an airtight container in the refrigerator for up to 5 days or freeze in a zip-tight bag for up to one month.
Notes
Make sure to use unsweetened pumpkin puree to keep treats healthy. Adjust the flour amount when rolling to prevent sticking. If dough is too dry, add a little water; if too wet, add more oats. For extra flavor, consider adding xylitol-free peanut butter.
