  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups boiling water

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  4. Gradually mix the wet ingredients into the dry mixture until combined.
  5. Slowly add boiling water to the batter, mixing until smooth. If desired, stir in red food coloring for a brighter cake.
Baking
  1. Pour the batter into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack.

Notes

Consider adding a scoop of vanilla ice cream on the side or serving it with fresh fruit like strawberries or raspberries. For added flavor, consider using flavored extracts like almond or lemon. Make sure the cake is thoroughly cooled before frosting to prevent melting.
