  • 1 cup tapioca flour Essential for gluten-free texture
  • 1 cup milk Whole or low-fat milk works well
  • 1/2 cup vegetable oil Can substitute with melted butter for flavor
  • 1 teaspoon salt Adjust to taste
  • 2 large eggs Ensure they are at room temperature
  • 1 cup grated cheese Parmesan or Cheddar recommended
  • 1/4 teaspoon baking powder Helps achieve the right texture

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a saucepan, combine milk, oil, and salt over medium heat until boiling.
  3. Remove from heat and stir in the tapioca flour until well combined.
  4. Allow the mixture to cool slightly, then add the eggs one at a time, mixing well after each addition.
  5. Stir in the grated cheese and baking powder until fully incorporated.
  6. Pour the batter into the prepared muffin pan, filling each cup about 3/4 full.
Baking
  1. Bake for 15-20 minutes or until the tops are lightly golden.
  2. Let cool slightly before removing from the pan and enjoy!

Notes

Best served warm. Store leftovers in an airtight container for up to three days, or freeze them for longer storage. Reheat in the oven.
